Beef Jerky

I started my evening with a printed recipe from the following link:

I don't own this link, I copied it from the website that I found.

Anyways, I had it printed, specially bought the ingredients and started to prepare the marinade for the meat... I had to pour it out. The smell of the sesame oil made me want to throw up, I tried to work around it and had to stop. I washed it down the drain and had to wash the onions, garlic and ginger to salvage them. I already had the sliced beef waiting, I didn't want to waste anything because of one bad smell, so I went off-book and off-recipe.

What I did:

Thinly sliced Sirloin
Onion
Garlic
Ginger
Water
Soy Sauce
Honey
Brown Sugar
Paprika
Chili Powder
Taco Powder
And more...

In no particular order I mixed them. I used my nose to smell out what smelled the best, I had to ask for help when I realized that I was down a nostril for smelling. I was assured that it smelled good after numerous additions of the above list and sometimes just additions of one thing, and so once i was happy, I added the Taco Marinade into the sliced beef and have put it to sit over night.

In addition to that one smell, while I was mixing the meat to make sure the marinade was smoothly spread, I learned that my freezer bag had a hole in the bottom.

I have re-bagged my bag and its in the fridge.



Update: March 10th.

After marinating the Jerky for 12 hours, I put it in the Dehydrator to cook for 5 hours at 160° f. Some meatier pieces needed to cook for some time, just half an hour.

I recommend watching your slicing. Thick Jerky needs to cook longer. Pick a cook time and pick a time to check it. For instance, I was going to cook my Jerky for 6 to 7 hours but set my timer to 5 hours to check on it. It was done at five hours, some pieces are a little overdone even. Watch the cook time.

It cooked it nicely. The ginger gives it a zing and it's not really Taco flavored, its closer to a BBQ flavor but still good.

I had friends over to taste it and they enjoyed it. Overall, it wasn't the easiest thing but then, it was.

It turned out good. I am quite happy with it.
